About This Place

Birrieria Y Menuderia Guadalajara, nestled conveniently at 396 Broadway in Chula Vista, CA, stands as a vibrant celebration of authentic Mexican flavors, specializing in the rich and hearty cuisine of Guadalajara. This Mexican restaurant is a true haven for aficionados of traditional dishes, offering an exceptional menu that showcases a wide array of beloved staples such as Tortillas made fresh by hand, Pozole, Carnitas, and their signature Birria De Res and Birria Tatemada De Chivo.

Stepping inside, you’re greeted by a warm and lively atmosphere where the tantalizing aroma of simmering broths and roasted meats fills the air, inviting you into an immersive culinary experience. The kitchen treats each dish as a work of art—each bite bursts with vibrant, deep flavors that honor generations of Mexican home cooking. The birria here is a must-try: the Birria De Chivo Tatemada features seared goat meat served with a side of silky, flavorful consomé and accompanied by soft, handmade corn tortillas. For those seeking a perfect balance between texture and richness, the “Solo Maciza” (solid meat) option elevates the experience, ensuring every morsel is pure, tender meat infused with smoky notes.

Another standout is the Menudo—a traditional tripe soup offered in both red and white (blanco) versions—that has earned stunning praise from regulars. According to one enthusiastic diner, this menudo is the best in the Greater San Diego area, expertly prepared with a perfect meat-to-soup ratio and crafted without any off-putting funk. Served alongside bone and tendon, the Menudo here is thoughtfully seasoned to highlight pure, comforting flavors without overwhelming saltiness or grease.

Beyond hearty soups, the menu tempts with delights like Tacos Doraditos Birria de Res con Tuétanos, where crispy, golden tacos are elegantly filled with birria and topped with indulgent bone marrow, delivering a symphony of textures and meaty depth. The Quesadilla Tonala and side of rich Frijoles round out the meal, offering a satisfying balance of cheesy warmth and earthy beans. For refreshing contrast, consider pairing your feast with a Michelada or savor the simple perfection of their Clásico Café Americano.

Service at Birrieria Y Menuderia Guadalajara is consistently highlighted by visitors as attentive and friendly, with staff who anticipate your every need and ensure that your dining experience is comfortable and memorable. Guests have also noted the inviting sense of community, amplified by the owner Martin and his team, who generously share their passion for their food and culture, sometimes bringing out complimentary samples to showcase lesser-known, rustic dishes. This dedication to hospitality makes every visit feel like a warm invitation into a slice of Mexican tradition.

Whether you're an aficionado seeking the traditional nuances of Guadalajara-style soups and stews or a curious newcomer eager to explore bold Mexican culinary craftsmanship, Birrieria Y Menuderia Guadalajara promises a deeply satisfying experience. Freshly made tortillas, perfectly balanced spices, and thoughtfully prepared ingredients combine to create dishes that comfort, captivate, and boldly celebrate the essence of Mexico’s rich gastronomic heritage.

Best menudo in the Greater San Diego area. The menudo is cooked perfectly and has no funk. The meat to soup ratio is perfect for me as I like my menudo heavy on the menudo and no hominy. I had the red menudo, pata, lengua & buche tacos, with a side of handmade tortillas. Everything was delicious. Menudo is a tripe soup with many different regional variations within Mexico. This is Guadalajara style which has a rich broth made with dried chilies and spices. They also offer a white menudo which is more common in northern Mexico.

Please don't expect to find any vegetarian or vegan options here. We were there before they opened. The staff is very friendly and attentive. They're on top of refills and checking on the tables to make sure clients are enjoying themselves. The food is hot and delicious. It's not salty, greasy, and it doesn't have excessive spices. It's just right. The tortillas are hand made fresh. The place is clean and they offer indoor as well as outdoor seating. I had the beef birria campechana and a jericalla for dessert. Totally would recommend. I don't usually have dessert, but it's my favorite!

Went Memorial Day around 2pm. No lines or wait, but parking was full, so not sure where people park when this place is packed. Thankfully, someone was leaving when we pulled in, so just a short wait. We had planned to order some birria and menudo to go and eat when we got home from our trip, but it smelled so good inside, we dieciséis to try a few items before we hit the road. Service was excellent. Even though we kept changing out mind about ordering to go, eating there, then kept ordering items one by one as we discovered more and more of the new items on their menu. First we ordered taco de birria, carnitas, buche and a consommé to start. Then we saw they had flautas which are made with carnitas and also have chicharrón on top!! Comes with consommé, so they offered to cancel the the first order for us. Then we saw the tuétano (bone marrow) which comes with a side of beef birria and both were outstanding!! Probably the best dish overall. We still ordered some birria de chivo and menudo to go for family and home, which we enjoyed for a few days. Everything was really good and service top notch. So happy we stopped by and will be a regular stop on our trips to SD. Bonus: down the street from the famous Tacos Los Gordos, so easy to try a bit of both if you’re from out of town! Pro tip: look at the new items noted across the walls for the full menu before you order. Not everything is listed on the menu at the table!

This is our spot for Birria de chivo tatemada. GOAT meat soup, they give a consome ( hot broth) on the side, the meat is cooked and serve on a separate plate its a little toasted. Plus (tatemada), home-made corn tortillas we had quesadillas on the side everything is so delicious you won't regret it. If you go after 4pm they have a different menu we didn't know but at this time they have Pozole, roll tacos , crunchy tacos and many other items definitely wants you to go for morning menu and come come back for the dinner menu. Fair prices. Family atmosphere, staff is very attentive and the place is very clean.

We went to an amazing restaurant tonight just down from the Hotel. Wowsers!! The owner Martin, and his two off-siders Martin and Oscar could not have been more welcoming. Martin #1 kept bringing out countless complementary plates to showcase their rustic Guardalajaran dishes and explaining how each dish was made as well as letting us know how to make Tequila. We came home with a large takeaway bag of dishes for us to try tomorrow. Martin even wanted to invite us to Sunday breakfast which is apparently a special gathering. Unfortunately we will have left by then.

We tried the goat quesataco burrito and really enjoyed it. The flavors were great—even if it’s not my usual go-to, the food itself was very good. I also had the horchata, which was delicious. I want to highlight the older waiter (around 50–55). I had read a negative review about him, but honestly, he was amazing. Super kind, gave us a drink on the house, and just had a great presence. He reminded me of Tony Soprano—not just the look, but the voice and mannerisms too. Absolute best guy ever, and he made the whole experience better. Highly recommend this spot.

This place is definitely the most authentic birreria you'll find! They actually make the birria with goat meat! They do also offer a beef birria option. Plus, they have the best carnitas I've ever had so full of flavor. We tried all the sides, rice, beans, guacamole the salsas, but the ultimate must have are the handmade corn tortillas!!! Just the tortillas with freshly made guacamole is enough to fall in love with this place!!Everything was so full of the most amazing authentic Mexican flavors. It doesn't get any better. The service is so friendly and welcoming. Some waiters of course friendlier than others. But it's all good. The only downfall of this place is it's kind of small and the wait can be a while. The wait is worth it though!!
